250 g Magerquark or Skyr
150 g Paprika (diced)
50 g Corn
30 g Spring onions (sliced)
150 g Grated cheese (e.g. Gouda)
3 Eggs
1 tbsp Oregano
½ tsp Salt
Pepper to taste
200 g Fresh plums
2 tbsp Sugar
1 tsp Cinnamon
Instructions
Preheat the oven to 180 °C (356 °F) top/bottom heat. This is important for even baking.
In a large bowl, mix 250 g Magerquark or Skyr with 3 eggs. Stir the mixture well until it is homogeneous, which should take about 2-3 minutes.
Add 150 g diced paprika, 50 g corn, and 30 g spring onions. Stir everything well until the ingredients are evenly distributed.
Add 150 g grated cheese, 1 tbsp oregano, ½ tsp salt, and pepper to taste. Mix everything thoroughly. The mixture should now be creamy and well-seasoned.
Prepare the plum filling. Cut 200 g fresh plums into small pieces. In a separate bowl, mix the plums with 2 tbsp sugar and 1 tsp cinnamon. Let the mixture sit for about 10 minutes to allow the plums to release their juices.
Grease a cake pan (about 20 cm diameter) well or line it with baking paper. Pour the batter into the pan and spread it evenly, making sure not to fill it too high.
Evenly distribute the plum filling over the batter. You can gently press it into the batter so that it doesn't stay on the surface while baking.
Bake the cake for about 40-45 minutes until it is golden brown and firm. A toothpick inserted should come out clean.
Let the cake cool in the pan for 10 minutes after baking before turning it out onto a wire rack. This keeps it moist and gives it a nice crust.
Serve the cake warm or at room temperature. It tastes especially good with a scoop of vanilla ice cream or a dollop of cream.
